Ortodoxo
Ortodoxo Bleu Portuguese Blue Cheese
Bleu is a blue cheese from Ortodoxo, an artisan cheese dairy in Azeitão, on the Setúbal Peninsula. Portugal makes very few blue cheeses, which makes this one a real find for blue lovers and a great talking point on a board.
Flavour and texture
Blue cheeses are pierced so that blue mould can grow through the paste. That gives the classic mix of salty, savoury and spicy notes against a creamy background. Expect a bold cheese with a long finish.
Food pairing
Serve it with walnuts, pears and a drizzle of honey, or crumble it over a salad of endive. The best match is a sweet wine: a Vintage or LBV Port, a 10 Year Old Tawny, or a Moscatel de Setúbal from the same region.
About Ortodoxo
Ortodoxo was founded by Maria Arriaga e Cunha and José Maria Abreu Lima, with a cellar in Vila Nogueira de Azeitão. The dairy works with organic raw milk and an artisanal, certified method, mixing tradition with new ideas.
