Flavour and texture

Portuguese olive oils are typically fruity and green, with hints of cut grass, apple or tomato leaf, a soft bitterness and a gentle pepperiness at the back of the throat.

Food pairing

Use it raw: on toasted bread with a pinch of salt, over bacalhau, grilled sardines, roast vegetables, beans or a simple salad. Pair the meal with a fresh white from Bucelas or the Vinho Verde region.

Fonte da Bica is a Portuguese brand of olive oil and olive-based preserves. Portugal grows olives from the Minho to the Algarve, and native varieties such as Galega, Cobrançosa and Cordovil give oils and pastes with a fruity, gently peppery character.
