Filipa Pato 3B Blanc de Blancs Sparkling

Filipa Pato 3B Blanc de Blancs is a Portuguese sparkling wine from Bairrada, made by the traditional method from the local white grapes Maria Gomes, Bical and Cercial. Bone dry, fresh and bright, it is a great aperitif and a smart alternative to Champagne at the table.

Tasting notes

The grapes are picked by hand and pressed gently, then the wine makes its second fermentation in bottle and rests 9 months on the lees. No dosage is added, so it is crisp and clean, with fine bubbles, citrus and orchard fruit.

Food pairing

Bairrada sparkling is the classic match for leitão, the local roast suckling pig. It is also lovely with oysters, fried fish, pastéis de bacalhau and roast white meats.

Filipa Pato and her husband, Belgian chef and sommelier William Wouters, farm their Bairrada vines biodynamically. Their vineyards sit on chalky clay slopes with direct Atlantic influence.

• Serve at 6-8 °C. With a sparkling wine stopper, keeps 1 to 2 days in the fridge.
• 75 cl bottle, traditional method sparkling, zero dosage, non-vintage.
