Dr. Bayard
Dr. Bayard Honey and Herb Hard Candies 100 g
Dr. Bayard Honey and Herb Hard Candies 100 g is a Portuguese sweet from Amadora, near Lisbon, made to a recipe first produced in 1949. These are the rebuçados Dr. Bayard that generations of Portuguese have kept in a coat pocket or a handbag. A small taste of childhood for locals, a curious souvenir for visitors.
Flavour and texture
The candies are made from sugar, glucose and honey dissolved in an infusion of herbs, following a recipe the family keeps secret. Expect a hard, glassy candy that melts slowly, with a warm honey sweetness and a gentle herbal note.
Food pairing
Not one for the plate: keep a few for after dinner, with a bica, or to finish a glass of ginja.
About Dr. Bayard
The story starts in 1939, when Lisbon was a refuge for people fleeing the war. Álvaro Matias, a young grocery assistant in the Baixa, befriended a French refugee, Dr. Bayard, who gave him his candy formula as a thank you. Production began in 1949, and today the family business, now in its third generation, makes the candies in Amadora.
