Casa do Porco Preto
Casa do Porco Preto Paio de Barrancos, Hand-Cut 100 g
Casa do Porco Preto Paio de Barrancos is a Portuguese cured pork sausage from Barrancos, in the Alentejo, made with Alentejano black pig and hand-cut into 100 g of thin slices. It is the easy way to taste real Alentejo charcuterie: open the pack, put it on a board, pour a glass.
Flavour and texture
Paio in the Alentejo style is made from lean pieces of pork seasoned with garlic, salt and sweet paprika paste, then cured. Expect a deep red slice, a firm bite and a savoury, gently spiced finish with the rich fat of the black pig.
How to enjoy it
Serve it with warm pão alentejano and olives, or alongside a sheep's cheese from Serpa. Pour an Alentejo red made from Trincadeira or Aragonez, or a Dão red with fresh acidity.
