Casa do Porco Preto
Casa do Porco Preto Copita de Barrancos (Whole Piece)
Casa do Porco Preto Copita de Barrancos is a whole Portuguese cured pork neck from Barrancos, in the Alentejo, made with Alentejano black pig. Think of a richer Alentejo coppa, to keep in the kitchen and slice whenever friends drop by.
Flavour and texture
The neck is well marbled, so the slices mix deep red meat with fine streaks of fat that melt on the tongue. The taste is round and savoury, with a light paprika warmth and a nutty finish.
How to enjoy it
Slice it paper thin for toasts with olive oil, or serve with figs, melon or a young sheep's cheese. Pour a Palhete, a light Alentejo red or a Bairrada sparkling.
