Brejo da Gaia
Brejo da Gaia Dona Gaia Soft Goat's Milk Cheese
Pickup currently not available
Dona Gaia Pasta Mole is a soft-paste aged goat's milk cheese from Brejo da Gaia, a farmhouse dairy in Tramagal, Ribatejo. Soft, creamy and generous, it is the one to put at the centre of the table and share.
Flavour and texture
Pasta mole means soft paste. The cheese is cured, but the inside stays supple and creamy, with a gentle tang from the goat's milk and a rounder, slightly mushroomy note near the rind.
Food pairing
Serve it at room temperature with crusty bread and fig jam, or with pears and walnuts. Pour a Vinho Verde Alvarinho, a Tejo Fernão Pires or a Bucelas Arinto to cut through the cream.
About Brejo da Gaia
Brejo da Gaia is a farmhouse cheese dairy in Tramagal, near Abrantes. Two brothers trained in animal science started a dairy goat farm there in 2002, and since 2012 they turn their own goats' milk into cheese, made by hand one at a time.
