Brejo da Gaia
Brejo da Gaia Aged Goat's Milk Cheese 70 g
This is a small aged goat's milk cheese from Brejo da Gaia, a farmhouse dairy in Tramagal, in Portugal's Ribatejo, in a 70 g piece. A whole little cheese for one or two, easy to slip into a picnic or a gift basket.
Flavour and texture
Curing firms the paste and concentrates the taste of goat's milk: clean and tangy at first, then rounder and slightly nutty. The small size means plenty of rind and a well-developed flavour.
Food pairing
Slice it with honey and walnuts, or serve it with olives and a slice of presunto. It is good crumbled over a salad too. For wine: a Vinho Verde Alvarinho, a Tejo white, or a dry Moscatel de Setúbal.
About Brejo da Gaia
Brejo da Gaia is a farmhouse cheese dairy in Tramagal, near Abrantes. Two brothers trained in animal science started a dairy goat farm there in 2002, and since 2012 they turn their own goats' milk into cheese, made by hand one at a time.
