Queijos Santiago
Queijos Santiago Queijo de Nisa DOP
Queijo de Nisa DOP is a protected raw sheep's milk cheese from Nisa, in Portugal's Alto Alentejo, made here by Queijos Santiago. It is one of the great cured sheep's cheeses of the Alentejo, firm enough to slice, rich enough to be the centre of a board.
Flavour and texture
Like other traditional Alentejo cheeses, Nisa is curdled with thistle. The paste is semi-hard and pale, with small holes. Santiago describes its Nisa as intense, with a slightly acidic and spicy finish.
Food pairing
Slice it with presunto, black olives and Alentejo bread. It loves a glass of Alentejo red: try an Aragonez and Alicante Bouschet blend, or a Trincadeira. A tawny Port at the end of the meal works too, with a few almonds.
