Queijo São Jorge Aged 4 Months
This is Queijo São Jorge, the raw cow's milk cheese of São Jorge island in the Azores, at a young cure of about four months. It is the easy entry into the Azores cheese everyone talks about: still supple, already tangy, good from breakfast to the aperitif.
Flavour and texture
At this age the paste is semi-hard and smooth, with small irregular holes. The taste is buttery and lightly tangy, with the gentle peppery note São Jorge is known for, still in the background. It gets sharper and nuttier as it ages.
Food pairing
Slice it for a sandwich with presunto, melt it in a tosta mista, or serve it in cubes with olives and a glass of chilled white. Azores whites from Pico, an Arinto from Lisboa or a young Douro red all work. It is also good with quince paste or Azores pineapple jam.
