Casa do Porco Preto
Casa do Porco Preto Paleta Reserva (Cured Shoulder), Hand-Cut 100 g
Pickup currently not available
Casa do Porco Preto Paleta Reserva is a Portuguese dry-cured shoulder of Alentejano black pig from the Barrancos area, in the Alentejo, hand-cut into 100 g of slices. Paleta comes from the front leg: smaller than a ham, with a more intense taste, and a smart way into black pig charcuterie.
Flavour and texture
Hand-cutting keeps the slices slightly irregular, with deep red meat threaded with fat. The flavour is concentrated and savoury, with notes of dried fruit and nuts, and the fat melts as soon as it warms up in your mouth.
How to enjoy it
Eat it at room temperature, with bread, almonds and a few olives. Try it with an aged Alentejo red, a Bairrada sparkling or a chilled glass of dry white Port.
