Brejo da Gaia
Brejo da Gaia Dona Gaia Goat's Cheese Log
Dona Gaia is a goat's milk cheese log from Brejo da Gaia, a farmhouse dairy in Tramagal, in Portugal's Ribatejo. Farm goat's milk in the classic log shape, ready to slice into neat rounds for a board or a warm salad.
Flavour and texture
A goat's cheese log has a thin rind around a white paste. Under the rind it turns soft and creamy, while the centre stays fresh, lightly chalky and gently tangy.
Food pairing
Grill rounds on toast and serve on a salad with walnuts and honey. Pair slices with fig jam or roasted peppers. In the glass: a Vinho Verde Alvarinho, a Tejo Fernão Pires or a dry Lisboa rosé.
About Brejo da Gaia
Brejo da Gaia is a farmhouse cheese dairy in Tramagal, near Abrantes. Two brothers trained in animal science started a dairy goat farm there in 2002, and since 2012 they turn their own goats' milk into cheese, made by hand one at a time.
