Brejo da Gaia
Brejo da Gaia Aurum Goat's Milk Cheese
Aurum is a goat's milk cheese from Brejo da Gaia, a farmhouse dairy in Tramagal, in Portugal's Ribatejo. A handmade farm cheese from goats raised on the same land, and a good way to discover Portuguese goat's cheese beyond the classics.
Flavour and texture
Goat's milk gives a clean, fresh and gently tangy taste. As farmhouse goat's cheeses mature, the paste firms up and the flavour turns rounder and nuttier, especially near the rind.
Food pairing
Serve it in wedges with honey and toasted almonds, or with fresh grapes and figs. It works well on a board next to presunto. For wine, a Tejo white made with Fernão Pires, a Vinho Verde Alvarinho or a dry Moscatel de Setúbal.
About Brejo da Gaia
Brejo da Gaia is a farmhouse cheese dairy in Tramagal, near Abrantes. Two brothers trained in animal science started a dairy goat farm there in 2002, and since 2012 they turn their own goats' milk into cheese, made by hand one at a time.
